Tuna and Pesto Pasta

I like pesto so much that ever since I learned to make my own, I try to do it every time I can. In fact I make sure that I always have a bottle or two of pesto sauce in the fridge. This PERFECT pasta combination is one of the reasons why. It is quick, easy, tasty and healthy. I got this combination from a good friend of mine, Christine, who I gave a bottle to.

The ingredients are very simple:

  1. Onions [sliced]
  2. Canned Tuna in brine
  3. Mushrooms [the ones you use for cooking – not smoking]
  4. Pesto Sauce

Instructions:

  1. Cook your pasta the way you want it.
  2. Use the oil from the pesto sauce to saute the onions. When the onions are translucent, add the tuna and onions. Cook for a few mins then turn off the heat.
  3. Drain your pasta. Mix the pesto sauce. Then mix the sauteed tuna.
  4. Serve immediately.

This is how mine turned out. Yes, I like it a bit dry. I also didn’t have mushrooms in the house – but it turned out well. In fact I loved the combination. It retained the subtlety of the pesto sauce, complimented by the tuna.
